Summary:This invention is in the field of plant molecular biology. More specifically, this invention pertains to compositions having increased levels of at least one phytosterol, said compositions being obtained from plants or plant parts, and methods thereof. The plants may have decreased levels of triterpene saponins. The plants or plant parts may comprise at least one recombinant DNA molecule comprising a promoter operably linked to at least a portion of at least one polynucleotide from at least one oxidosqualene cyclase gene, said recombinant DNA molecule sufficient to increase the production of at least one phytosterol; or any progeny of said plant, wherein said progeny comprise said recombinant DNA molecule. Compositions, oils, as well as food and feed products obtained from or prepared with said compositions are also part of the invention.
