Summary:Jacqueline Higuera McMahan celebrates that cuisine in her new book, "Rancho Cooking" An eighth-generation Californian, whose ancestor was given a 4,000-acre land grant in 1821, she spent her childhood on Los Tularcitos, the 15-acre remnant of the original rancho in the hills near Milpitas. The author recalls the relatives, the holidays, the life, the fiestas and the food of her childhood. Higuera's recipes range from chilaquiles and enchiladas to all sorts of olla dishes - those cooked in clay stewpots - such as guisado de gallina, chicken braised in cinnamon and red wine. Posole and carne asada vie with cinnamon rolls and the wonderfully crusty bolillos - the European-inspired spindle-shaped rolls of Mexico.
