Last year, a few greenmarket farmers had the brilliant idea of preserving just-harvested crops for the winter, so look for $2-a-pound strawberries from Wilklow Orchards from Highland, N.Y., $4 bags of bi-color corn from Migliorelli Farms in Tivoli and in-shell soybeans from Long Island's Hydrogarden Farm (aka D&J Organic). Steam them for 2-3 minutes, says owner David Yen, and you've got some of the tastiest winter edamame in town. (One pound is $3, 2 pounds are $5.) Wilklow is at Brooklyn's Borough Hall on Tuesdays and Saturdays and Brooklyn's Fort Greene Park on Saturdays. Both Migliorelli and Hydrogarden Farm are at Union Square on Wednesdays, Fridays and Saturdays; Hydrogarden Farm is also there Mondays.
