Within that context, we provide an overview on the state of research and summarise the core problems researchers face when estimat- ing the demand and structural supply models implemented in applied research to date. We focus on important themes, such as providing a better understanding of ver- tical relationships in food markets, price formation, competition issues, environmen- tal and nutritional policies.
