Summary:This study aimed to evaluate antioxidant activity, in vitro, and to determine the polyphenol content of different types of vinegar sold in southern Brazil. Analysis was carried out to identify the antioxidant activity using the 2.2-diphenyl-1-picrylhydrazyl and the polyphenols content by the Folin-Ciocalteau methods. One used Analysis of Variance and Tukey post-test (p [less than or equal to] 0.01) to evaluate data. The antioxidant activity was expressed in [IC.sub.50], and it had values between 22.11 and 122.07%. The polyphenols content ranged between 1.02 and 16.00mg% of catechin. One concluded that the samples of vinegar have great variations of antioxidant activity and phenolic compound among them. The balsamic vinegar showed the best values for both antioxidant activity and the total polyphenols content.
