Summary:The banana (Musa spp.) is originally from southern Asia, being considered the most consumed and produced fruit worldwide, including in Brazil. In Brazil, during harvesting and marketing, there is a great loss due to poor handling. Because of this, the commercialization of green bananas has become a strategy to reduce waste, in addition to being considered a good alternative for controlling glycidic metabolism, due to its high content of resistant starch in its composition. Therefore, the present work aims to study, through a bibliographic review, the benefits of green bananas and observe their relationship with blood glucose and glucose metabolism. The research was carried out in the databases (CAPES journals, Scielo, PubMed, Google Scholar) and articles were selected in Portuguese, English and Spanish, between the years 2006 to 2019. The studies showed the therapeutic potential of green bananas, rich in resistant starch, on glucose metabolism, with improvement in insulin resistance and glucose homeostasis. However, further studies must be carried out to determine the necessary amount of grammage for healthy individuals with pathologies. Key words: Obesity. Glucose metabolism. Functional foods. Green banana. Resistant starch. A banana (Musa spp.) e originaria da Asia meridional, sendo considerada a fruta mais consumida e produzida em todo mundo, incluindo o Brasil. No Brasil, durante a colheita e comercializacao, ha grande perda devido ao manejo deficiente. Com isso, a comercializacao da banana verde tornou-se uma estrategia para reduzir o desperdicio, alem de ser considerada uma boa alternativa para controle do metabolismo glicidico, devido apresentar elevado conteudo de amido resistente em sua composicao. Sendo assim, o presente trabalho tem o objetivo de estudar por meio de revisao bibliografica os beneficios da banana verde e observar a sua relacao com a glicemia e o metabolismo glicidico. A pesquisa foi realizada nas bases de dados (Periodicos CAPES, Scielo, PubMed, Google Academico) e foram selecionados artigos em portugues, ingles e espanhol, entre os anos de 2006 a 2019. Os estudos mostraram o potencial terapeutico da banana verde, rica em amido resistente, sobre o metabolismo glicidico, com melhoria da resistencia a insulina e da homeostase da glicose. Contudo, novos estudos devem ser realizados para determinar a quantidade necessaria em gramatura para individuos saudaveis e com patologias. Palavras-chave: Obesidade. Metabolismo glicidico.
