Summary:The azeotrope mixture of isopropyl alcohol and water (IPA azeotrope) was used as the solvent for oil extraction from sunflower seed kernel. The global technological problems connected with the oil extraction kinetics with this solvent were overviewed. The obtained results were compared to the ones obtained by using hexane as the solvent. The work included also the investigation of the possibility of oil separation from the IPA miscella by coalescence. The obtained results showed that IPA azeotrope can be very successfully used for the extraction of oil and other components from the sunflower seed. The fact that this solvent decreases significantly the content of carbohydrates and coloured polyphenolic compounds in the meal is of special interest.
