Summary:The samples of muscullus longissimus dorsi muscle Domestic cattle x Charollais aged 18 months have been investigated in the different time post mortem (1h, 1 and 7 days of storage at 4 deg C). Reactions of histological coloring on succinatedehydrogenase (SDH) and ATP-ases heave been applied. On the basis of reaction on succinatedehydrogenase it was found that the numerical ratio of types of fibers (red, white and intermediary) does not change in the course of post mortal up to 7 days. Postmortal changes reflect them selves on the arrangement of muscle fibers in early period p.m. (1h p.m.) the fibers are compacted with smaller intercellular spaces appeared. ATP-ase activity of muscle fibers of meat is decreased post mortem, so that by extending of that time (up to 7 days) it is reduced.
