Summary:The influence of a low pH and of bile salts on the survival of cells of selected strains of Lactobacillus acidophilus, L. delbrueckii, L. helveticus, L. paracasei, L. plantarum, Lactococcus lactis and Bifidobacterium sp. was studied. A highest survival rate was determined for cells of Bifidobacterium longum, L. plantarum UH1Y and L. acidophilus CCDM V982 (10E3-10E4 CFU.cm sup(-3) from the original counts of 10E7-10E9 CFU.cm sup(-3). Cells of the strains L. delbruckeii LD05, L. pentosus and L. helveticus CCM 3806 did not survive in acidic conditions during 30 min.
