Summary:Occurrence of the Listeria spp. in ripening soft cheeses was studied. Detection of Listeria spp. was performed according to the standard CSN ISO 10560 after previous verification of selectivity of the nutrient media Oxford and PALCAM using pure cultures. Continuous occurrence of Listeria spp. in Olomouc cheese-cakes was confirmed by microbiological analysis. Thus, the manufacture was monitored in order to find possible sources of contamination. To accelerate detection, the method of immunomagnetic separation of Listeria spp. was utilized. The IMS method saved the time of analysis in comparison with the standard cultivation method by one day
