Summary:Contents of selected metals (Hg, As, Pb, Cd, Ni, Cr, Cu, Fe, Zn, Mn) in amaranth products in 1995 and 1996 was studied and compared with the relevant hygienic limit values for cereal products. Atomic absorption spectrometry methods, using graphite furnace and flame, were used. Iron content was higher than the maximum limit value, nevertheless, it was compared with the limit value as defined for the category of "other foodstuffs", since the maximum hygienic limit value of iron for "cereal products" has not been defined. The contents of other metals in the products were below the hygienic limit values
