Summary: | Two betacyanins, amaranthin and isoamaranthin, have been isolated from leaves and petioles of three amaranth species (Amaranthus caudatus, A. cruentus, and A. gangeticus) by gel-filtration, polyamide chromatography and Dowex-50Wx2 chromatography. The distribution of betalain oxidase throughout different organs of the amaranth plants was determined. Subcellular location of the enzyme was also studied; betalain oxidase was found in cell walls (A. caudatus) and in the fraction of soluble proteins (A. cruentus, A. gangeticus). Conditions favoring optimal operation of the enzyme were determined (pH 3.4, 38 degree C) |
