Summary:A new meat product enriched in polyunsaturated fat acids (PUFA) for nutrition of children above 1 year has been developed. It is meat balls weighted 3.0-4.0 g poured by bullion and packed into sterilized jars. As a source of PUFA a food additive Ropufa 30 (deodorized pale-green based on fish oil is used. For developing formulas, meat raw materials were combined with other components of plant and animal origin to prepare compositions close to the reference (mature human milk) in amino acid and fat acid structure. The formulas comprise raw meat for infant nutrition – beef and veal (the weight fraction (WF) of fat is 9%), lean pork (WF of fat is 15%) and semi-fat pork (WF of fat is 32%). As is found, adding PUFA to a product allows obtaining the required ratio of fat acids. The influence of antioxidants (vitamin E, red palm oil, selenium) as a part of enriched product on the safety in it PUFA under sterilization. It is expected that organization of production of domestic preserved infant nutrition with a yearly output of 1 mln jars will give a possibility to save 30.6 ml rub every year.
