Summary:The objective of the paper is to investigate the possibility of use of Amaranthus sp. grain in food production. Nutritive importance, medicinal and specific biological capacities represented the basis to start the investigation of Amaranthus sp. The consumer market for amaranth has thus far been relatively small and confined to health foods and specialty food. However, amaranth production and utilization are both expanding and considerable research is being conducted to lay the base for the development of additional amaranth products for consumer markets.
