Summary:Investigations were conducted to establish the traditional methods of production and to study methods of improving and modernizing the process. Microbiological as well as chemical changes occurring during fermentation were also monitored. The results showed that a number of modifications and improvements can be made to the existing processes, which will help to overcome many of the problems currently faced by processors using the traditional methods. These included the use of alternative raw materials, improvements to the production methods, introduction of mechanization where appropriate, and production of shelf-stable products
