Summary:The author described the importance of refrigeration in Italy for fruits and vegetables. After a brief review of the Italian species of fruit involved in controlled atmosphere storage, specific equipments are shown and described in relation to the applied ULO and LECA techniques as well as for high CO2 treatments.
