Summary: | The spores of four types of Clostridium botulinum, suspended in phosphate buffer, were evaluated for their resistance to combined pressure-temperature treatments (600 MPa - 100 and 110 deg C, 800 MPa - 80, 88 and 90 deg C). The two type A strains have similar decimal reduction times (D): strain 62A has a D = 3.1´ and 1.38´ at 800 MPa - 90 deg C and at 600 MPa - 100 deg C, respectively, whereas type A ATCC 19397 has a D = 3.25´ and 0.91´ at 800 MPa - 88 deg C and at 600 MPa - 100 deg C, respectively. Non-proteolytic type B ATCC 25765 proved to be more resistant than proteolytic type B A TCC 7948: D at 800 MPa - 90 deg C was 3.45´ and 2.66´ for the non-proteolytic and for the proteolytic strain, respectively
E´ stata valutata lo resistenza a trattamenti combinati pressione-calore (600 MPa - 100 e 110 gradi C, 800 Mpa - 80, 88 e 90 gradi C) di spore di quattro tipi di Clostridium botulinum sospese in tampone fosfato. I due ceppi tipo A hanno tempi di riduzione decimali (D) simili: il tipo 62A ha un D = 3.1´ e 1.38´ a 800 Mpa - 90 gradi C e a 600 MPa - 100 gradi C, rispettivamente, mentre il tipo A ATCC 19397 ha un D = 3.25´ e 0.91´ a 800 MPa - 88 gradi C e a 600 MPa - 100 gradi C, rispettivamente.
