Summary:About the commercial and sanitary frauds, for the species identification we propose the IEF technique as official EC analytical method. The use of this method is suitable for fillets or slices of fish. In simple cases, a visual comparison between patterns of examined species and patterns of certain identified species, present in databank, to identify the fish species, is enough. In more complex cases, supplementary tests are required, as the use of a gel analysis software (Image Master Elite ID) and cluster analysis. In more difficult cases, Polymerase Chain Reaction is necessary Viene proposta una tecnica analitica, IEF (IsoElectric Focusing), che diventi metodica ufficiale europea, adatta al riconoscimento di specie ittiche commercializzate in filetti o in tranci, al fine di evitare frodi commerciali o sanitarie. In casi semplici sara' sufficiente l'esame macroscopico visivo per riconoscere la specie, confrontata con specie sicuramente identificate raccolte in una banca dati. Esami piu' complessi richiederanno l'ausilio di software per l'analisi di gel (IMlD), con ottenimento di dendrogramma (o cluster analysis). In casi ancora dubbi, il riconoscimento di specie ittica si potra' accertare con la tecnica analitica della PCR
