Summary: | The ability of the Penicillium verrucosum strain SSICA C1 to produce ochratoxin A (OTA) was again evaluated on raw dry sausages, stuffed either in natural or in artificial casings, subjected to a typical ripening process. OTA presence on the two types of casings and in the peripheral and central parts (core) of the mix was evaluated at pre-established time intervals by using and comparing two methods for toxin determination: a rapid immunofluorometric method and the traditional RP-HPLC technique. In the mix, OTA highest mean values were 6.5 and 0.5 microng/kg on days 60 and 70, respectively, for sausages in natural casings and about 3.0 and 0.25 microng/kg on days 49 and 60, respectively, for samples with artificial casings. Higher OTA concentration levels were observed on the casings. The two techniques used for OTA determination proved to be statistically comparable for values higher than or equal to l microng/kg (detection limit of this toxin by the immunofluorometric method)
La capacita' del ceppo Penicillium verrucosum SSICA Cl di produrre ocratossina A (OTA) e' stata nuovamente valutata su insaccati carnei, parte in budello naturale e parte in budello artificiale, sottoposti ad un tipico processo di stagionatura. La presenza di ocratossina A (OTA) sui due tipi di budello e nella frazione concentrica esterna (corona) e centrale (cuore) dell'impasto e' stata valutata a intervalli definiti di stagionatura impiegando e confrontando due metodi di determinazione della tossina: immunofluorimetrico rapido e tradizionale mediante RP-HPLC. Il contenuto medio massimo di OTA estratto dall'impasto e' stato di circa 6,5 e 0,5 microng/kg al 60mo e 70mo giorno, rispettivamente, per i campioni con budello naturale; di circa 3,0 e 0,25 microng/kg al 49mo e 60mo giorno, rispettivamente, per i campioni con budello artificiale. Sui budelli sono state rilevate concentrazioni di OTA piu' elevate. Le due tecniche impiegate per la determinazione dell'OTA si sono rivelate statisticamente confrontabili per valori superiori o uguali a 1 microng/kg (limite di rivelazione di questa tossina con il metodo immunofluorimetrico) |
