Summary:The aim of this study was to compare three analytical technique for the determination of intramuscular fat in swine thirty one samples of Longisimus dorsis, muscle samples was taken from 31 different animals were analyzed using the methods Folch et al. (1957) (F), the method described by Marmer and Maxwell (1981) (MM) and One Step (1988) (OS). No significant difference (P<0.08) observed when comparing OS and MM. However significant differences (P<0.0001) were detected OS methods and F, it is concluded that the OS is most suitable for the analysis of intramuscular fat, as a means of saving time, reagents and waste for the other two methods.
