Strictly anaerobic bacteria in beer and in breweries. A review

This article summarizes the main morphological, biochemical and physiological properties of the bacterial genera Pectinatus, Zymophilus, Selenomonas and Megasphaera which can spoil beer. These bacteria are mesophilic and nonsporulating with strictly fermentative metabolism.
