Summary:Basic methodological foundations of assessment of effectiveness activity of industrial enterprises are examined. Present time problems and difficulties of factories of baking industry as one of the most social significant department of processing sphere of agriculture sector of the country are explored. Theoretical foundations of analyze of activity of the factory of baking industry are divulged, major criteria of assessment of effectiveness of baking industry are grounded. Analytic tools of detection and quantitative assessment of growth factors of effectiveness of baking factories are proposed. The basic share in the cost price of manufacture of bread and bakery products is occupied with material inputs. As possibilities ­ of influence on a rise in prices on used in baking industry raw materials are limited,­ by the main task facing to the enterprises-manufacturers of bread and bakery products,­ there is a decision of a problem of rational use of industrial resources­. Therefore the important factors of decrease in the cost price and increase of profitability of production are search of optimum­ suppliers of raw materials and labour productivity increase­
