Summary: | Heat treatment is one of the most important unit operations in the processing of milk and milk products. Quite different aspects are responsible for the importance of evaluating heat treatment. On the one hand, it enables the investigator to establish whether the objectives of the heat treatment have been achieved, i.e. hygienic safety, prolonged shelf-life, distinct functional properties, desired end-product specifications, etc. On the other hand, heat treatment can also induce undesired reactions, which affect organoleptic properties, nutritional or manufacturing value and are described as 'heat damage'. |
