Summary:Fabricated baby food products is in very growth and development nowdays. To produce quality baby food it is important to know all specific facts about intants, characteristics of their organisams (especialy digestive tract), nutrient needs and to know the way of their feeding. Samples analysed in this paper are the friut based baby food produced by different kind of fruits, sterilisated and packed in glass jars. This kind of foods is additional food recommended for infants in the age from four to 12 mounths. The acidity of baby food is very important for infant nutrition and food digestion. Acidity from food have to improve the acididity in stomach (acidity of gastric liquids). Ph values in infants gastric liquid has higher levels in comparision with adults. Food digestion in infants is easier in high acidity medium. In this case the acidity of fruit based baby food is mostly related with naturaly presence of fruit acids with citric acid (E330) which is added in production process to disable the spoilage of product. Free aminoacids have very small efect to pH of fruit based baby food. The main aim of this paper is to give the relation between fruit acids and free aminoacids quantitative presence and pH value of baby food semples. The Efect of free aminoacids on pH value in samples can give us informations about aminoacids nature. Results are obtained by analysing of eight fruit based baby food samples and we have got following results:  The pH values were between 3,77 and 4,54  Valuees of fruit acids were between 0,16% and 0,67%  Free aminoacids have values from 0 to 0,46%  There are no relaton between free aminoacids and pH value  The relation between fruit acids (as citric acid) content and pH value is noticed. Fruit acids increasing in samples results decreasing of pH value.
