L'invention concerne procédé de préparation de xylitol, qui se caractérise en ce qu'un micro-organisme agit sur D-arabitol et le transforme en un xylitol pouvant être récolté. Ledit micro-organisme appartient aux espèces suivantes: gluconobacter, acétobacter, achromobacter, agrobacterium, arthrobacter, azotobacter, brevibacterium, corynebacterium, erwinia, flavobacterium, staphylococcus, norcardia, planococcus, pseudomonas, rhodococcus, morganella, actinomadura, actinomyces ou streptomyces.
