Abstract | A process for producing methyl alpha -L-aspartyl-L-phenylalaninate or alpha -L-aspartyl-L-phenylalanine characterized by treating L-isoasparagine and methyl L-phenylalaninate with cultures of microorganisms capable of producing methyl alpha -L-aspartyl-L-phenylalaninate or alpha -L-aspartyl-L-phenylalanine from L-isoasparagine and methyl L-phenylalaninate and belonging to the genera Cedecea, Enterobacter, Escherichia, Hafnia, Klebsiella, Morganella, Rahnella, Serratia and Yersinia, or optionally treated microbial cells sepatated from these cultures; and taking up the methyl alpha -L-aspartyl-L-phenylalaninate or alpha -L-aspartyl-L-phenylalanine.
