Summary:A process for producing methyl alpha -L-aspartyl-L-phenylalaninate or alpha -L-aspartyl-L-phenylalanine characterized by treating L-isoasparagine and methyl L-phenylalaninate with cultures of microorganisms capable of producing methyl alpha -L-aspartyl-L-phenylalaninate or alpha -L-aspartyl-L-phenylalanine from L-isoasparagine and methyl L-phenylalaninate and belonging to the genera Cedecea, Enterobacter, Escherichia, Hafnia, Klebsiella, Morganella, Rahnella, Serratia and Yersinia, or optionally treated microbial cells sepatated from these cultures; and taking up the methyl alpha -L-aspartyl-L-phenylalaninate or alpha -L-aspartyl-L-phenylalanine. L'invention concerne un procédé de production de alpha -L-aspartyl-L-phénylalanine ou de alpha -L-aspartyl-L-phénylalaninate, qui consiste à traiter de la L-isoasparagine et du L-phénylalaninate méthylique à l'aide de cultures de micro-organismes capables de produire alpha -L-aspartyl-L-phénylalanine ou alpha -L-aspartyl-L-phénylalaninate méthylique à partir de L-isoasparagine et de L-phénylalaninate méthylique et appartenant au genre Cedecea, Enterobacter, Escherichia, Hafnia, Klebsiella, Morganella, Rahnella, Serratia and Yersinia, ou de cellules microbiennes éventuellement traitées séparées de ces cultures; et à prélever alpha -L-aspartyl-L-phénylalanine ou alpha -L-aspartyl-L-phénylalaninate méthylique.
