Summary: | A novel beta -fructofuranosidase gene; a beta -fructofuranosidase encoded therewith; a method of isolating a beta -fructofuranosidase gene by using the novel beta -fructofuranosidase gene; a novel beta -fructofuranosidase obtained by the above method; a novel filamentous fungus which does not exhibit a beta -fructofuranosidase activity and is suited for producing beta -fructofuranosidases; a system for producing a recombinant beta -fructofuranosidase by using the above fungus as the host; and a beta -fructofuranosidase variant which forms specified fructo-oligosaccharides such as 1-ketoses from cane sugar selectively and efficiently.
