Summary:A thermostable proteolytic enzyme which is producible by Thermoactinomyces thalpophilus THM1 (NCIMB 40778) and which: (a) has a pH optimum of about 8; (b) has a temperature optimum of about 70 DEG C; (c) is substantially inhibited by 1 mM phenylmethylsulphonylfluoride but substantially not inhibited by 10 mM dimethylsulphoxide, dithiothreitol or beta -mercaptoethanol; (d) is at least partially dependent on the presence of calcium for its thermostability; and (e) is thermostable at 50 DEG C for at least 6 hours without substantial loss of activity, is useful in the preparation of protein hydrolysates for nutritional and clinical use. On peut obtenir une enzyme protéolytique thermostable par Thermoactinomyces thalpophilus THM1 (NCIMB 40778). Cette enzyme possède un pH optimum de 8 (a); elle possède une température optimum d'environ 70 DEG C (b); elle est sensiblement inhibée par 1mM de phénylméthylsulfonylfluorure mais non inhibée par 10mM de diméthylsulfoxyde, dithiothreitol ou beta -mercaptonéthanol (c); sa stabilité thermique dépend au moins partiellement de la présence de calcium (d); elle est thermostable à 50 DEG C pendant au moins 6 heures sans perte importante d'activité. Cette enzyme est utile pour préparer des hydrolysats de protéines dans le but de les utiliser à des fins nutritives ou cliniques.
