L'invention fournit un procédé de fabrication d'acide gras polyinsaturé à chaîne très longue qui inclut une étape au cours de laquelle un composé représenté par la formule (II) (Ｒ１－ＭｇＸ１) et un élément de formule (III) (Ｘ２－（ＣＨ２）ｍ－Ｘ) sont mis en réaction dans un solvant, et un composé représenté par la formule (I) (Ｒ１－（ＣＨ２）ｍ－Ｘ) est obtenu. 本発明により、式ＩＩ：Ｒ１－ＭｇＸ１で表される化合物と、式ＩＩＩ：Ｘ２－（ＣＨ２）ｍ－Ｘを、溶媒中、反応させて、式Ｉ：Ｒ１－（ＣＨ２）ｍ－Ｘで表される化合物を得ることを含む、超長鎖多価不飽和脂肪酸の製造方法が提供される。
