The invention relates to a process for the preparation of an allulose syrup containing allulose at a product concentration of more than 70 wt.-%, relative to the total weight of the allulose syrup, the process comprising the steps of (a) providing an aqueous solution containing allulose at an educt concentration of at most 70 wt.-%, relative to the total weight of the solution; and (b) evaporating water at a temperature of the solution of less than 60 °C and under reduced pressure thereby increasing the concentration of allulose in the aqueous solution starting from the educt concentration until the product concentration is reached. L'invention concerne un procédé de préparation d'un sirop d'allulose contenant de l'allulose à une concentration de produit supérieure à 70 % en poids, par rapport au poids total du sirop d'allulose, le procédé comprenant les étapes consistant à (a) fournir une solution aqueuse contenant de l'allulose à une concentration de substance de départ d'au plus 70 % en poids, par rapport au poids total de la solution ; et (b) évaporer l'eau à une température de solution de moins de 60 °C et sous pression réduite, ce qui permet d'augmenter la concentration d'allulose dans la solution aqueuse à partir de la concentration de substance de départ jusqu'à ce que la concentration de produit soit atteinte.
