Summary: | The present invention relates to: a group of microorganisms, formed by Lactobacillus sp. strain K03D08, Bacillus sp. strain K03B01 and Kazachstania sp. strain K03K02G, which allows the hydrolysis of casein in different dairy products and the production of short-chain fatty acids and hydroxylated short-chain fatty acids; a method for obtaining a casein-free dairy byproduct rich in short-chain fatty acids and hydroxylated short-chain fatty acids, which uses said microorganisms; compositions containing the microorganisms; and, lastly, a method for producing each of the microorganisms of the invention.
La presente invención corresponde a un grupo de microorganismos, compuesto por Lactobacillus sp. cepa K03D08, Bacillus sp. cepa K03B01 y Kazachstania sp. cepa K03K02G, que permite la hidrólisis de la caseína en diferentes productos lácteos y la producción de ácidos grasos de cadena corta y ácidos grasos de cadena corta hidroxilados; un proceso de obtención de un derivado lácteo libre de caseína y enriquecido en ácidos grasos de cadena corta y ácidos grasos de cadena corta hidroxilados que utiliza los microorganismos antes nombrados; composiciones que contienen los microorganismos; y finalmente al método de producción de cada uno de los microorganismos de la invención.
La présente invention concerne un groupe de microorganismes, constitué de Lactobacillus sp. souche K03D08, Bacillus sp. souche K03B01 et Kazachstania sp. souche K03K02G, qui permet l'hydrolyse de la caséine de différents produits lactés et la production d'acides gras à chaîne courte et d'acides gras à chaîne courte hydroxylés ; un procédé d'obtention d'un dérivé lacté dépourvu de caséine et enrichi en acides gras à chaîne courte et en acides gras à chaîne courte hydroxylés qui utilise les microorganismes susnommés ; des compositions contenant les microorganismes ; et enfin, le procédé de production de chacun des microorganismes de l'invention. |
