L'invention concerne des compositions et des procédés se rapportant à la stabilisation d'enzymes oxydases à l'aide de glycine d'acides aminés. Les compositions et les procédés permettent de sécher des compositions contenant une oxydase avec un rendement d'activité enzymatique amélioré et un stockage à long terme de compositions contenant une oxydase séchée, dans certains cas sans nécessiter de réfrigération.
