L'objectif de la présente invention est de fournir une nouvelle composition d'émulsion ayant une structure de gel α.　L'invention réalise à cet effet une composition d'émulsion huile dans eau comprenant un alcool amide représenté par la formule (I) et un alcool supérieur, le rapport molaire de l'alcool amide et de l'alcool supérieur étant de 1:3 à 1:11. 本発明は、αゲル構造を有する新たな乳化組成物を提供することを目的とする。　式（Ｉ）で表されるアミドアルコールおよび高級アルコールを含むＯ／Ｗ乳化組成物であって、アミドアルコールと高級アルコールとのモル比が１：３～１：１１である、前記乳化組成物。
