The device and method for returning aromatics to the fermentation broth solves the technical problem of the loss of aromatics during fermentation process if fermentation is carried out at temperatures that are ideal for yeast operation in such a way that the temperature of the fermentation broth is maintained at 15°C to 30°C or a temperature that is ideal for the development of yeasts. At the same time, C02 is formed, and aromatics in form of vapors. This gas mixture is fed to the condenser, where the aromatics are condensed while C02 continues on. The condensed aromatics are returned to the fermentation broth by use of device according to the invention. L'invention concerne un dispositif et un procédé de retour de composés aromatiques dans le bouillon de fermentation qui résolvent le problème technique lié à la perte de composés aromatiques pendant le processus de fermentation si la fermentation est effectuée à des températures idéales pour l'opération de culture de levures de telle sorte que la température du bouillon de fermentation soit maintenue à une température comprise entre 15 °C et 30 °C ou à une température idéale pour le développement de levures. Dans le même temps, du CO2 est formé, ainsi que des composés aromatiques sous forme de vapeurs. Ce mélange gazeux est introduit dans le condenseur, dans lequel les composés aromatiques sont condensés tandis que le CO2 poursuit son chemin. Les composés aromatiques condensés sont renvoyés dans le bouillon de fermentation au moyen du dispositif selon l'invention.
