Provided are: a culturing method in which the zeaxanthin-producing capacity and the proliferative capacity of zeaxanthin-producing microorganisms can be maintained, even under a prescribed pressure condition; and a zeaxanthin production method using the culturing method. In the methods, the zeaxanthin-producing microorganisms are cultured in a medium containing a chelating agent, and the zeaxanthin-producing capacity and the proliferative capacity of the microorganisms under the prescribed pressure condition are improved. L'invention concerne un procédé de culture, la capacité de production de zéaxanthine et la capacité proliférative des micro-organismes produisant de la zéaxanthine pouvant être maintenues, même dans des conditions de pression prescrites ; et un procédé de production de zéaxanthine utilisant le procédé de culture. Dans les procédés, les micro-organismes produisant la zéaxanthine sont cultivés dans un milieu contenant un agent chélatant, et la capacité de production de zéaxanthine et la capacité proliférative des micro-organismes dans les conditions de pression prescrites sont améliorées.
