La présente invention concerne un procédé de production d'acides organiques par la synthèse biochimique d'acide-Coa organique à l'aide d'acétyl-CoA comme substrat, et la soumission de l'acide-CoA organique a une réaction d'élimination de CoA au moyen d'une CoA-transférase en présence d'acide acétique, un microorganisme transformé ayant un groupe de gènes enzymatiques pour la synthèse d'acide-CoA organique à l'aide d'acétyl-CoA comme substrat et un gène CoA-transférase est mis en culture pour obtenir un acide organique.
