Summary: | Disclosed are a soft candy which, more than previous kinds, does not easily adhere to teeth, is light with a fullness of taste while furnishing a sensation of firm chewing, and a production method thereof. A candy dough (12), containing 0.2 to 5 wt% of pullulan and 0.2 to 2 wt% of gelatin, is stretched by an arm (10) of a pulling machine (3), and with the intermediate part of the stretched candy dough (12) being held by an arm (11), the candy dough (12) is folded by the rotary force of the arm (11). The repetition of this series of steps incorporates bubble into the candy dough (12) and reduces the relative density of the candy dough (12) to 1.2 or less.
L'invention concerne un bonbon mou qui, plus que les types de bonbons antérieurs, ne colle pas facilement aux dents, est léger avec une plénitude de goût tout en donnant une sensation de mâchage ferme ; et son procédé de production. La pâte de bonbon (12), qui contient 0,2 à 5 % en poids de pullulane et 0,2 à 2% en poids de gélatine, est étirée par un bras (10) de machine d'étirage (3), la partie intermédiaire de la pâte de bonbon étirée (12) étant maintenue par un bras (11), et est repliée par la force de rotation du bras (11). La répétition de cette série d'étapes permet d'incorporer des bulles dans la pâte de bonbon (12) et de réduire sa densité relative à moins de 1,2 ou à 1,2. |
