Cette invention a trait à la maîtrise de l'éclosion des bourgeons des plantes en utilisant des hydrates de carbone. Les procédés de la présente invention impliquent à la fois le retard de l'éclosion des bourgeons d'une plante ou la promotion de l'éclosion des bourgeons comprenant l'utilisation d'un hydrate de carbone choisi parmi un sucre et un polyol et leurs combinaisons. La présente invention se rapporte également à des kits et à un appareil utilisables dans lesdits procédés et dans d'autres domaines.
