Summary:A food composition comprising gas bubbles is provided. It contains based on the food composition at least 10 wt% and less than 95 wt% of water, at least 0.5 wt% and less than 20 wt% of protein, at least 1 vol.% and less than 70 vol.% of gas, at least 0.001 wt% and less than 10 wt% fibre particles and at least 0.001 wt% and less than 10 wt% surface active particles. Also a process is provided to prepare the product. The process includes the steps of incorporating surface active particles and fibre particles in a liquid food composition, incorporating gas in said liquid composition and packing the food composition. L'invention concerne une composition alimentaire comprenant des bulles de gaz. Cette composition contient, en fonction de la composition alimentaire, 10 à 95 % en poids d'eau; 0,5 à 20 % en poids de protéines; 1 à 70 % en volume de gaz; 0,001 à 10 % en poids de particules fibreuses et 0,001% à 10 % en poids de particules tensio-actives. L'invention concerne également un procédé destiné à préparer ce produit. Ce procédé comprend les étapes consistant à : incorporer des particules tensio-actives et des particules fibreuses dans une composition alimentaire liquide, incorporer un gaz dans cette composition liquide et conditionner cette composition alimentaire.
