Une chymosine de veau contenant 1098 p et codant pour 366 acides aminés a été isolée et clonée dans un vecteur PET 21b d'expression bactérienne de E.coli. On fait fermenter cette souche et la protéine est précipitée par adjonction d'alcali. Une forme active est extraite par renaturation et purifiée sous faible pH. |
