During the production process of a tea drink, a treatment is carried out with the use of diglycosidase originating in a microorganism. L'invention concerne un procédé de production d'une boisson à base de thé présentant un goût enrichi ou amélioré. L'invention concerne également un procédé de production d'une boisson à base de thé présentant un goût amélioré et une qualité stable, y compris lors d'une productivité élevée. Pendant ce procédé de production d'une boisson à base de thé, on réalise un traitement au moyen d'une diglycosidase issue d'un micro-organisme.
