L'invention concerne un mélange d'acides comestible, des produits renfermant celui-ci et des procédés de préparation associés. Au moins deux acidulants sont encapsulés par une matrice de polyvinyle acétate. Un mélange d'acides encapsulé est ainsi obtenu. De préférence, le mélange d'acide comprend au moins un acide fumarique et un acide malique. Le mélange peut être utilisé dans des produits ingestibles, notamment des sucreries.
