Summary:This invention is directed to process for the production of edible beans, comprising the addition of an organic acid to the conditioning water, to the cooking water, or to both, which will provide a premium quality dehydrated bean. The beans of this invention are easy to prepare and will provide the same amount of finished beans as dry bag beans. The beans of the invention will have significantly fewer loose skins and free meats than currently available dehydrated beans. Further, the dehydrated beans of the invention will have a color similar to that of canned or dry bag beans. Cette invention concerne un procédé de production de haricots comestibles, qui consiste à ajouter un acide organique à l'eau de conditionnement et/ou à l'eau de cuisson, afin d'obtenir des haricots déshydratés de qualité supérieure. Les haricots de l'invention sont faciles à préparer et donnent, à l'état fini, la même quantité de haricots que des haricots secs en sachet. Les haricots de l'invention présentent une épiderme et une chair considérablement moins friables que les haricots déshydratés actuellement disponibles sur le marché. Les haricots déshydratés de l'invention présentent en outre une couleur similaire à celle des haricots en boîte ou des haricots secs en sachet.
