Summary:Stable, storable, crystalline potassium sorbate is obtained by atomizing a potassium sorbate solution with a pH higher than the equivalence point of potassium sorbate and drying the atomized solution so that the water content is less than 0.2% by weight. The drying may be by incorporating a heated gas, such as air, with the solution at a temperature not above 155 DEG C. and a pressure below the atmosphere.
