Summary:The present invention relates to a process for the selective isolation of highly purified, crystalline D-mannose from complex sugar mixtures, in particular from mixed wood sugars, more particularly from spent sulfite liquor (SSL). The process of the present invention is based on converting mannose into essentially pure mannose bisulfite adducts. Subsequent oxidative recovery of mannose from the mannose bisulfite adducts renders crystalline mannose in improved yields and purities.
