This invention provides dietary fiber food and manufacturing method thereof, the dietary fiber food is made by the following manufacturing method, the manufacturing method comprises: (a) providing vegetable; (b) heating the vegetable to blanch it; (c) homogenizing the blanched vegetable; and (c) homogenizing the vegetable processed by step (c) with high-pressure under 1,000-1,500 bar to make the dietary fiber food being in a powder form, wherein the high-pressure homogenizing process is performed 1-3 times. By the above dietary fiber food and manufacturing method thereof, the ration of soluble dietary fiber in the dietary fiber food is enhanced.
