Summary:A method for determining whether grease, such as lard, deteriorates. The method comprises the steps of: (a) extracting a grease sample to be tested to obtain an extract; (b) analyzing the extract for a selected set of mass-to-charge ratios using liquid chromatography followed by mass spectrometry, and thereby obtaining signal intensity data of the extract in the set of mass-to-charge; and (c) comparing the obtained signal intensity data with the signal intensity data of normal grease obtained by the extraction and analysis of step (a) and step (b), and determining the comparison result whether the grease sample to be tested deteriorates.
