A battery structure is provided. The battery structure includes an electrolyte assembly, a first electrode, a second electrode, a first collector layer, a second collector layer, a first substrate and a second substrate. The electrolyte assembly includes a support mesh and a polymer gel solid electrolyte structure. The polymer gel solid electrolyte structure surrounded support mesh. The first electrode and the second electrode are respectively disposed on two opposite sides of the electrolyte assembly. The first electrode is located between the first collector layer and the electrolyte assembly, and the second electrode is located between the second collector layer and the electrolyte assembly. The first collector layer is located between the first substrate and the first electrode, and the second collector layer is located between the second substrate and the second electrode. In addition, an electrolyte assembly and a manufacturing method of battery structure are also provided.
