Summary: | A protein having improved solution clarity at acid pH, suitable for the protein enrichment of acidic beverages, is isolated by treating a protein-containing aqueous solution with a phosphate, as a result of which a protein-phosphate complex is formed, adjusting the pH of the solution to 6 to 8 by addition of a base, separating off the precipitate formed during this from the pretreated protein-containing aqueous solution and mixing the latter with a polyphosphate of medium chain length. The pH of the protein-phosphate-complex-containing solution formed in this is adjusted by acid to 4.5 to 2.0, as a result of which the protein-phosphate complex is precipitated out. This is separated off from the supernatant solution and dispersed in water having a final pH of 5.0 to 12.0. The resulting dispersion is then brought into contact with an anion exchanger resin and the protein-containing solution eluting is isolated. |
